Gregory Shimoda is the complex chef, garde manger for the Walt Disney World Swan and Dolphin Resort. In his role, he is responsible for purchasing, production handling, quality and presentation of cold food for all catered functions. He supervises a staff of 20, including two sous chefs. Shimoda is also heavily involved in the food production for the hotel’s banquet events. He has been in this role since 1998.
A multi-award winning garde manger chef, Shimoda has also won numerous medals for his ice carving expertise, such as the 1st place Gold Team award in the Orlando competition in 2000 and 3rd place that same year in the singles competition. He also holds a gold medal from the 1999 Sarasota competition and has placed highly in national competitions as well. He participated in the world competition in Japan in 1995.
